Ahmed Al Noor
Founder & Master Baker
"37 years and I still check every dough by hand. The oven tells you when it's ready — you just have to listen."
In 1988, Ahmed Al Noor opened a small corner bakery in Al Qasimiah with nothing but a wood-fired oven, a handful of family recipes, and a simple belief: that bread, made with patience and love, brings people together. He baked saffron khameer before sunrise, regag bread for afternoon tea, and chebab for the families who walked past on their way home from the souq.
What began as a single shop slowly became a Sharjah institution. Families who first tasted Ahmed's bread as children now bring their own grandchildren through the same doors. The recipes have never changed — the same saffron from the same spice merchant, the same slow-fermented dough, the same hand-shaping that Ahmed taught his son Khalid when Khalid was tall enough to reach the counter.
In 2002, demand outgrew the original corner shop, and Al Noor Bakery opened its second location. In 2015, the family introduced a small line of modern classics — saffron cake, date cake, mahalabiya — without ever touching the traditional recipes that built their name. And in 2024, Omar Al Noor, the third generation, took over daily operations, bringing new energy to the same old craft.
Today, three generations still work side by side. Ahmed, now in his seventies, still walks through the bakery every morning to check the dough. Khalid leads the bakers. Omar runs the business. The bread is still baked with love. The doors still open at 6 AM. And the family still believes what Ahmed believed in 1988 — that good bread, made honestly, is one of the simplest and most powerful ways a community takes care of itself.

We don't just bake bread.Ahmed Al Noor — Founder, 1988
We bake memory.
Three principles that have guided every loaf since 1988
We never change a recipe that works. The same saffron, the same flour, the same slow ferment — because some things shouldn't be improved.
Every batch is checked by hand. If it's not good enough for our family's table, it's not good enough for yours. No exceptions, no shortcuts.
For 37 years, our customers have been our neighbors. We feed Ramadan iftars, school events, weddings — because a bakery is part of its neighborhood.
A small corner bakery opens in Al Qasimiah with one wood-fired oven and a handful of family recipes.
After fourteen years of growing demand, Al Noor Bakery opens its second shop to serve more of Sharjah.
Saffron cake, date cake, and mahalabiya join the menu — new favourites alongside the traditional breads.
Omar Al Noor steps into daily operations, bringing new energy to the same craft his grandfather started.
